  • 1 cup warm water not too hot
  • 1 cup warm milk not too hot
  • 1 tablespoon sugar can be omitted
  • 2 teaspoons instant yeast
  • 4 cups all-purpose flour can substitute half with whole wheat
  • 2 teaspoons salt
  • 2 tablespoons olive oil
For the Topping
  • 3 tablespoons za’atar spice store-bought or homemade
  • 5 tablespoons extra virgin olive oil

Step-by-Step Instructions
  1. In a mixing bowl, combine warm water, warm milk, and sugar. Sprinkle the instant yeast over the mixture and let it sit for about 5-10 minutes until frothy.
  2. Stir in olive oil, then gradually mix in flour and salt. Knead on a floured countertop for 8-10 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 hour.
  3. For the topping, mix together za’atar spice and extra virgin olive oil until thick and spreadable. Let rest for 15 minutes.
  4. Once the dough has risen, punch it down and divide into four equal portions. Roll each into an 8-inch circle.
  5. Spread the za’atar mixture over each round, leaving a half-inch border.
  6. Preheat oven to 475°F. Transfer flatbreads onto a baking sheet or pizza stone. Bake for 10-12 minutes until golden brown.
  7. Let cool briefly, then serve warm with vegetables or labneh.
