- In a mixing bowl, combine warm water, warm milk, and sugar. Sprinkle the instant yeast over the mixture and let it sit for about 5-10 minutes until frothy.
- Stir in olive oil, then gradually mix in flour and salt. Knead on a floured countertop for 8-10 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 hour.
- For the topping, mix together za’atar spice and extra virgin olive oil until thick and spreadable. Let rest for 15 minutes.
- Once the dough has risen, punch it down and divide into four equal portions. Roll each into an 8-inch circle.
- Spread the za’atar mixture over each round, leaving a half-inch border.
- Preheat oven to 475°F. Transfer flatbreads onto a baking sheet or pizza stone. Bake for 10-12 minutes until golden brown.
- Let cool briefly, then serve warm with vegetables or labneh.
