Ingredients
  

For the Pasta
  • 8 ounces Fusilli Pasta or penne or rotini
For the Seafood
  • 1 pound Large Shrimp or chicken breast
For the Sausage
  • 8 ounces Andouille Sausage or regular smoked sausage
For the Vegetables
  • 1 medium Red Bell Pepper or yellow/orange bell peppers
  • 1 medium Green Bell Pepper optional
  • 1 medium Onion yellow or sweet onion preferred
  • 3 cloves Garlic minced
For the Sauce
  • 1 cup Alfredo Sauce jarred or homemade
  • ½ cup Pasta Water reserved from cooked pasta
For the Seasoning
  • 2 tablespoons Cajun Seasoning Tony Chachere's recommended
  • 1 teaspoon Smoked Paprika or regular paprika
For the Finishing Touches
  • ½ cup Parmesan Cheese or Pecorino Romano
  • 2 tablespoons Minced Parsley optional

Method
 

Preparation
  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup pasta water, drain.
  2. Sauté the shrimp in a skillet with olive oil for 1-2 minutes per side until pink. Remove and set aside.
  3. Brown the andouille sausage in the same skillet for 3-4 minutes.
  4. Sauté red and green bell peppers and onion for 5 minutes, then add minced garlic for the last minute.
  5. Stir in Alfredo sauce, reserved pasta water, Cajun seasoning, and smoked paprika. Simmer for 3-4 minutes.
  6. Combine shrimp and drained pasta in the skillet, tossing to coat with sauce. Add more pasta water if needed.
  7. Serve garnished with parsley and Parmesan cheese.
