Preparation
- Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup pasta water, drain.
- Sauté the shrimp in a skillet with olive oil for 1-2 minutes per side until pink. Remove and set aside.
- Brown the andouille sausage in the same skillet for 3-4 minutes.
- Sauté red and green bell peppers and onion for 5 minutes, then add minced garlic for the last minute.
- Stir in Alfredo sauce, reserved pasta water, Cajun seasoning, and smoked paprika. Simmer for 3-4 minutes.
- Combine shrimp and drained pasta in the skillet, tossing to coat with sauce. Add more pasta water if needed.
- Serve garnished with parsley and Parmesan cheese.
