- Heat a large skillet over medium-high heat. Add oil and ensure an even coating.
- Pat grouper fillets dry and season both sides with salt and pepper.
- Place seasoned grouper in the skillet and cook for 3-4 minutes on each side until golden brown.
- Remove grouper and keep warm. Add minced garlic to the skillet and cook until fragrant, about 30 seconds.
- Pour coconut milk into the pan with garlic, add chili peppers, stir, and let simmer for 3-5 minutes.
