  • 1/2 cup Creamy Peanut Butter avoid natural varieties for texture
  • 1/4 cup Water adjust thickness as needed
  • 3 tablespoons Soy Sauce use tamari for gluten-free
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 tablespoon Honey maple syrup is a vegan substitute
  • 1 tablespoon Pure Sesame Oil toasted sesame oil preferred
  • 1 teaspoon Fresh Ginger grated or frozen
  • 1 teaspoon Garlic Powder

Step-by-Step Instructions
  1. In a medium bowl, whisk together creamy peanut butter, soy sauce, lime juice, honey, pure sesame oil, fresh ginger, garlic powder, and water. Adjust water for desired consistency.
  2. In a large mixing bowl, add the coleslaw mix. Chop the shredded cooked chicken and dice the red bell pepper, then add all to the coleslaw.
  3. Add chopped chicken, bell pepper, scallions, and optional herbs to the bowl. Toss gently to distribute all ingredients.
  4. Drizzle the peanut dressing over the salad. Toss to coat all pieces well. Taste and season with salt and pepper as desired.
  5. Serve the salad immediately for freshness. Garnish with extra chopped peanuts or herbs if desired.
