Ingredients
  

For the Braised Beef
  • 2 pounds Boneless beef shank brisket can be a great substitute
  • 1 tablespoon Fresh ginger adds aromatic spice
  • 4 cups Water to cover the beef fully
  • 30 grams Rock sugar substitute with granulated sugar if needed
  • 1 stick Cassia cinnamon regular cinnamon works in a pinch
  • 1 Bay leaf can be omitted
  • 1 Star anise pod or a hint of five-spice powder
  • 1 piece Dried tangerine peel substitute with orange peel
  • 3 Whole cloves use sparingly
  • 1 teaspoon Sichuan peppercorns can use black or white pepper
  • 4 cloves Garlic must be fresh
For the Scallion Pancakes
  • 4 pieces Store-bought scallion pancakes homemade versions can be used
  • 2 tablespoons Oil neutral oil like canola
For Fresh Toppings
  • 1 cup Cucumber or carrots as a substitute
  • 1/2 cup Chopped scallions can omit
  • 1/4 cup Chopped cilantro can omit
For Assembly
  • 1/2 cup Hoisin sauce or soy sauce and sugar mixture
  • 1/4 cup Shaoxing wine or dry sherry as an alternative
  • 2 tablespoons Light soy sauce or tamari for gluten-free
  • 1 tablespoon Dark soy sauce omit for lighter taste

Method
 

Step-by-Step Instructions
  1. Prepare the Beef for Braising: Bring water to a boil and add beef shank and ginger. Pre-boil for 30 seconds, then drain and rinse.
  2. Braise the Beef: Return cleaned beef and ginger to pot, cover with water, and add rock sugar, spices, and garlic. Simmer on low for 1 hour.
  3. Cool the Braised Beef: Remove from heat and cool in braising liquid for 2 hours or overnight.
  4. Cook the Scallion Pancakes: Heat oil in skillet and cook pancakes until golden brown on both sides.
  5. Slice the Beef and Prepare Vegetables: Slice cooled beef against the grain and prepare cucumber and herbs.
  6. Assemble the Rolls: Spread hoisin sauce on pancakes, add beef and veggies, and roll tightly.
  7. Slice and Serve: Cut rolls in half to display interiors, serve with extra sauce or chili oil.
