  • 2 tablespoons Brown Sugar balances sauce
  • 2 tablespoons Lime Juice adds acidity
  • 1 teaspoon Red Pepper Flakes adjust to heat preference
For the Veggies
  • 3 cloves Garlic minced
  • 1 inch Ginger grated
  • 1 Bell Pepper sliced thinly
  • 1 small Onion sliced
  • 1/4 cup Fresh Basil Leaves stirred in at the end
For Serving
  • 2 cups Cooked Jasmine Rice for serving

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine the soy sauce, sweet chili sauce, fish sauce, brown sugar, lime juice, and red pepper flakes. Whisk until brown sugar is dissolved.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add minced garlic and grated ginger, stir for about 30 seconds.
  3. Add the chicken breast to the skillet. Cook for 5-7 minutes until golden brown and almost cooked through.
  4. Stir in the sliced bell pepper and onion. Sauté for another 3-4 minutes until vegetables are tender-crisp.
  5. Pour the sauce over the chicken and vegetables, stir to coat. Allow to simmer for about 3 minutes until thickened.
  6. Remove from heat, stir in fresh basil leaves until just wilted.
  7. Serve hot over jasmine rice, spoon extra sauce and vegetables on top.
