Step-by-Step Instructions
  1. Preheat the oven to 400°F (204°C) and prepare a large casserole dish lined with foil.
  2. Slice the shallots thinly and spread across the bottom of the casserole dish, scatter half of the garlic cloves, and sprinkle with thyme and rosemary.
  3. Drizzle oil over the chicken in a bowl, season with salt and pepper, then place skin-side up on the aromatic layer.
  4. Pour chicken broth and white wine around the chicken carefully.
  5. Roast the chicken uncovered for about 1 hour until golden brown and internal temperature reaches 165°F (74°C).
  6. For extra crispy skin, broil the chicken for the last 5 to 7 minutes of cooking.
  7. Remove from the oven, spoon pan juices over the chicken, let rest for a few minutes before serving.
