- In a large mixing bowl, combine ground pork or beef, breadcrumbs, hoisin sauce, soy sauce, minced garlic, grated ginger, egg, sesame oil, salt, and pepper. Mix gently until just combined.
- Heat a heavy skillet over medium-high heat and drizzle in 1-2 tablespoons of neutral oil. Add the meatballs in batches and sear for about 3-4 minutes on each side.
- Lower the heat to medium and clean out the skillet if necessary. Pour in hoisin sauce, soy sauce, rice vinegar, sesame oil, and 2-3 tablespoons of water, stirring. Let simmer for about 3-5 minutes until thickened.
- Return the meatballs to the skillet and gently toss in the sauce. Cover and simmer for 4-6 minutes.
- In a separate bowl, whisk together scallions, soy sauce, rice vinegar, sesame oil, and sugar until sugar dissolves. Set aside.
- Plate the meatballs and drizzle with the scallion sauce, garnishing with extra chopped scallions before serving.
