Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil. Add the egg noodles and cook according to the package instructions, typically around 4-6 minutes, until al dente. Drain the noodles in a colander, shaking off excess water, and set aside.
  2. In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium heat. Allow the oil to warm up for about 1-2 minutes until it’s shimmering.
  3. Add the minced garlic to the hot oil, stirring frequently for about 30 seconds until fragrant and golden.
  4. Sprinkle in the red chili flakes and sauté them with the garlic for an additional 30 seconds.
  5. Carefully stir in the soy sauce, oyster sauce (if using), sesame oil, and sugar. Mix well for about 1 minute.
  6. Gently add the cooked noodles into the wok. Toss everything together for about 2-3 minutes, ensuring each noodle is well coated.
  7. Taste your noodles and adjust the seasoning by adding salt if needed. Toss in the chopped spring onions.
