Step-by-Step Instructions
- Begin by bringing a large pot of salted water to a rolling boil. Add the egg noodles and cook according to the package instructions, typically around 4-6 minutes, until al dente. Drain the noodles in a colander, shaking off excess water, and set aside.
- In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium heat. Allow the oil to warm up for about 1-2 minutes until it’s shimmering.
- Add the minced garlic to the hot oil, stirring frequently for about 30 seconds until fragrant and golden.
- Sprinkle in the red chili flakes and sauté them with the garlic for an additional 30 seconds.
- Carefully stir in the soy sauce, oyster sauce (if using), sesame oil, and sugar. Mix well for about 1 minute.
- Gently add the cooked noodles into the wok. Toss everything together for about 2-3 minutes, ensuring each noodle is well coated.
- Taste your noodles and adjust the seasoning by adding salt if needed. Toss in the chopped spring onions.
- Transfer the Spicy Garlic Chilli Noodles to serving dishes. If desired, garnish with fresh coriander and serve immediately while hot.
