Ingredients
  

For the Dough

  • 4 large Large Eggs Aim for roughly 260g-270g, excluding shells.
  • 1/2 cup Unsalted Butter At room temperature; can substitute salted butter.
  • 1/4 cup Granulated Sugar Adjust to taste.
  • 2 teaspoons Active Dry Yeast If using active dry, activate it in warm milk first.
  • 1 cup Warm Milk Optimal temperature is between 95-104°F (35-40°C).
For the Filling
  • 1/2 cup Soft Brown Sugar Adds moisture and deeper flavor.
  • 2 tablespoons Ground Cinnamon Adjust to taste.
For the Icing
  • 8 oz Cream Cheese At room temperature for easier mixing.
  • 2 cups Confectioners Sugar Sweetens and thickens the icing.
  • 2 tablespoons Milk Adjust the icing's consistency.
  • 1 teaspoon Vanilla Extract Enhances the flavor of the icing.

Method
 

Dough Preparation
  1. In a small bowl, combine warm milk, yeast, and a teaspoon of sugar. Let sit for 5-10 minutes until frothy.
  2. In a large bowl, mix warm milk, sugar, eggs, flour, and salt. Stir in the yeast mixture to create a soft dough.
Dough Kneading
  1. Transfer dough onto a floured surface, knead for about 5 minutes. Gradually add cubed butter and knead for an additional 15 minutes until shiny.
First Rise
  1. Shape the dough into a ball, place in a greased bowl, cover with a towel, and let rise for 1-2 hours until doubled.
Cold Proof
  1. Deflate dough and reshape into a ball. Wrap in plastic and refrigerate overnight.
Rolling and Filling
  1. Roll out chilled dough into a rectangle, spread softened butter, and top with brown sugar and cinnamon. Roll tightly and cut into 12 pieces.
Second Rise
  1. Arrange rolls in a greased baking dish, cover, and let rise for an hour until puffy.
Baking
  1. Preheat oven to 350°F (180°C). Bake rolls for 28-30 minutes until golden brown.
Glaze Preparation
  1. In a bowl, beat together cream cheese, confectioners' sugar, vanilla, and milk until smooth.
Serving
  1. Drizzle glaze over warm rolls before serving.
