- Preheat your oven to 425°F (220°C). Marinate the chicken thighs with olive oil, tomato paste, yogurt, and spices for at least 30 minutes.
- Spread the marinated chicken on a greased sheet pan in a single layer and roast for 30-45 minutes until cooked through.
- Prepare the salad by combining diced cucumbers, halved tomatoes, sliced onion, and parsley. Drizzle with olive oil, season and toss.
