Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Marinate the chicken thighs with olive oil, tomato paste, yogurt, and spices for at least 30 minutes.
  2. Spread the marinated chicken on a greased sheet pan in a single layer and roast for 30-45 minutes until cooked through.
  3. Prepare the salad by combining diced cucumbers, halved tomatoes, sliced onion, and parsley. Drizzle with olive oil, season and toss.
  4. Make the garlic yogurt sauce by whisking together yogurt, mayonnaise, grated garlic, and lemon juice. Adjust consistency with water if needed.
  5. Warm pitas in foil in the oven for 5-10 minutes until soft.
  6. Assemble by spreading garlic yogurt sauce inside warm pitas, filling with chicken and salad, and adding more sauce if desired.
