Method
 

Step-by-Step Instructions
  1. Pat chicken thighs dry and rub with seasoning salt, garlic powder, and paprika.
  2. Combine flour with remaining seasonings in a bowl and dredge chicken thighs.
  3. Heat oil in a pan and sear chicken thighs skin-side down for 5 minutes, then flip and cook for another 5 minutes.
  4. In the same pan, sauté butter, onion, and garlic, then whisk in flour mixture and chicken stock to make gravy.
  5. Return seared chicken back to the pan and spoon gravy over.
  6. Bake in a preheated oven at 400°F (200°C) for 45 minutes, covered with a lid.
  7. Let rest for a few minutes, then serve garnished with parsley.
