- Pat chicken thighs dry and rub with seasoning salt, garlic powder, and paprika.
- Combine flour with remaining seasonings in a bowl and dredge chicken thighs.
- Heat oil in a pan and sear chicken thighs skin-side down for 5 minutes, then flip and cook for another 5 minutes.
- In the same pan, sauté butter, onion, and garlic, then whisk in flour mixture and chicken stock to make gravy.
- Return seared chicken back to the pan and spoon gravy over.
- Bake in a preheated oven at 400°F (200°C) for 45 minutes, covered with a lid.
