  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear 2 pounds of chuck roast, browning on all sides for about 3-5 minutes. Transfer the beef to your slow cooker.
  2. In the slow cooker, add the seared beef, one chopped onion, 2 tablespoons of tomato paste, one can of fire-roasted diced tomatoes, one can of tomato sauce, and 2 cups of beef broth.
