  • 2 lbs Boneless, Skinless Chicken Breasts
  • 1 medium Onion Diced
For the Sauce
  • 1/2 cup Soy Sauce Low-sodium optional
  • 3 tbsp Gochujang Chili Paste Adjust to taste
  • 2 tbsp Garlic Paste or Minced Garlic Fresh preferred
  • 1 tbsp Ginger Paste or Minced Ginger Fresh recommended
  • 1/4 cup Honey Maple syrup as vegan alternative
For Serving
  • 2 cups Uncle Ben’s Ready Rice (Jasmine or Cauliflower Rice) Cooked
  • 1/4 cup Mayo For Spicy Korean Mayo, Greek yogurt optional

Method
 

Preparation
  1. Prepare the Slow Cooker: Place diced onions at the bottom of your slow cooker.
  2. Add Chicken: Layer the boneless, skinless chicken breasts on top of the onions.
  3. Mix Sauce: In a medium bowl, whisk together the soy sauce, Gochujang, garlic, ginger, and honey.
  4. Cook: Set the slow cooker to low and cover; cook for 6 to 8 hours until tender.
  5. Shred Chicken: After cooking, use two forks to shred the chicken in the slow cooker.
  6. Cook Rice: Prepare the rice per package instructions, using the microwave for Uncle Ben’s Ready Rice.
  7. Assemble Bowls: Divide rice into serving bowls and top with shredded chicken and sauce.
  8. Drizzle with Spicy Mayo: Top with homemade Spicy Korean Mayo and optional garnishes.
