Marinating and Grilling
- In a ziplock bag, combine olive oil, white wine vinegar, minced garlic, Greek seasoning, lemon juice, salt, and pepper. Seal and shake well.
- Add chicken pieces to the marinade. Seal tightly and massage to coat. Refrigerate for at least 6 hours or overnight.
- Preheat your grill to medium-high heat (around 375°F) about 15 minutes before cooking.
- Remove chicken from the marinade and thread onto skewers. Leave a little space between each piece.
- Grill skewers for 10-15 minutes, turning occasionally until cooked through and internal temperature reaches 165°F.
- Remove skewers from grill, let rest in foil for 5 minutes. Serve with pita, tzatziki, and vegetables.
