Ingredients
  

For the Marinade
  • 1.5 pounds Chicken Breasts or Thighs Cut into 1-inch pieces
  • ¼ cup Olive Oil Can substitute with avocado or vegetable oil
  • 2 tablespoons White Wine Vinegar Can substitute with lemon juice
  • 3 cloves Garlic Minced; fresh offers best flavor
  • 2 tablespoons Greek Seasoning Essential for authentic flavor
  • 1 each Lemon Juice Juice from one lemon
  • to taste Salt Reduces for low-sodium diets
  • to taste Black Pepper Freshly cracked pepper preferred
For Serving
  • 4 pieces Pita Bread Use gluten-free wraps if needed
  • 1 cup Tzatziki Sauce Homemade preferred for extra touch
  • to taste Fresh Vegetables Cucumbers, tomatoes, or red onions
  • 1 cup Greek Salad Brightened with feta and olives

Method
 

Marinating and Grilling
  1. In a ziplock bag, combine olive oil, white wine vinegar, minced garlic, Greek seasoning, lemon juice, salt, and pepper. Seal and shake well.
  2. Add chicken pieces to the marinade. Seal tightly and massage to coat. Refrigerate for at least 6 hours or overnight.
  3. Preheat your grill to medium-high heat (around 375°F) about 15 minutes before cooking.
  4. Remove chicken from the marinade and thread onto skewers. Leave a little space between each piece.
  5. Grill skewers for 10-15 minutes, turning occasionally until cooked through and internal temperature reaches 165°F.
  6. Remove skewers from grill, let rest in foil for 5 minutes. Serve with pita, tzatziki, and vegetables.
