Method
 

Preparation Steps
  1. Slice eggplants into ¾-inch thick rounds and sprinkle salt on both sides. Let sit for 20-30 minutes to draw moisture.
  2. Preheat your oven to 425°F (220°C). Brush eggplant rounds with olive oil and season with black pepper and oregano.
  3. Arrange eggplant slices on a baking sheet lined with parchment paper and roast for about 15 minutes.
  4. Remove roasted eggplant and spoon tomato sauce over each slice, then top with mozzarella and a sprinkle of parmesan.
  5. Return to the oven and bake for another 5-8 minutes until cheese is bubbly. Broil for a crispy finish if desired.
  6. Let rest for 5 minutes, garnish with fresh basil leaves, and serve warm.
