Method
 

Step-by-Step Instructions
  1. Melt butter in a medium saucepan over medium-low heat. Whisk in flour and cook for 2 minutes. Gradually add milk while whisking until thickened, about 5–7 minutes. Stir in mustard, salt, and pepper.
  2. Preheat waffle maker. In a bowl, mix flour, baking powder, and salt. Add eggs, milk, and melted butter. Mix until blended, then fold in ham and cheese.
  3. Grease waffle maker. Pour batter and cook for 4–5 minutes until golden brown. Remove and keep warm.
  4. On a baking sheet, spoon béchamel over waffles, add ham and sprinkle with cheese. Broil for 2–3 minutes until bubbly and brown.
  5. Top each waffle with a poached egg and garnish with chives. Serve hot.
