- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry and season with salt, pepper, paprika, and garlic powder.
- Heat olive oil in an oven-safe skillet and sear the chicken thighs skin-side down for about 5 minutes.
- Remove chicken, add cubed potatoes to the skillet, and season with rosemary, salt, and pepper.
- Return chicken to the skillet on top of the potatoes and roast for 25-30 minutes until done.
- Let the chicken rest for 5 minutes and garnish with parsley before serving.
