Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and black pepper. Use your hands to mix the ingredients thoroughly until well incorporated, about 2-3 minutes.
  2. Wet your hands lightly to prevent sticking and scoop out portions of the mixture. Form each portion into elongated oval shapes, approximately 3 inches long. Aim for about 10-12 kofta.
  3. Preheat your grill or grill pan over medium-high heat for about 5 minutes, applying a light coat of olive oil to prevent the kofta from sticking.
  4. Carefully place the kofta on the preheated grill, making sure not to overcrowd the pan. Grill each side for about 5-7 minutes, turning them halfway, until they are golden brown and have nice grill marks.
  5. While the kofta grills, mix the plain yogurt, fresh lemon juice, and a pinch of salt in a small bowl. Stir in minced garlic to taste.
  6. Once the Chicken Kofta is evenly grilled, remove them from the heat and let them rest for a couple of minutes. Serve with the creamy garlic yogurt sauce on the side.
