Ingredients

  • 1 pound Boneless Skinless Chicken Breasts Cut into bite-sized pieces
  • 1/2 cup Cornstarch For crunchy coating
  • 1 teaspoon Salt Use sea salt for better flavor
  • 1/2 teaspoon Black Pepper Freshly cracked preferred
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used
  • 1 teaspoon Paprika Smoked paprika for different flavor
  • 1/4 cup Vegetable Oil Can use olive or avocado oil
For the Sauce
  • 1/2 cup Mayonnaise Can substitute with Greek yogurt
  • 1/4 cup Sweet Chili Sauce Key ingredient for flavor
  • 1-2 tablespoons Sriracha Adjust for spice level
For the Toppings
  • 2 cups Shredded Lettuce Use your favorite greens
  • 1 medium Diced Cucumber Adds hydration and crunch
  • 1 cup Shredded Carrots For sweetness and color
  • 3 tablespoons Chopped Green Onions For garnish

Method
 

Preparation
  1. In a large mixing bowl, combine cornstarch, salt, black pepper, garlic powder, and paprika. Toss chicken pieces in the mixture until evenly coated.
  2. Heat about 1/4 cup of vegetable oil in a skillet over medium-high heat. Fry chicken pieces for 5-7 minutes until golden brown and fully cooked.
  3. In a small bowl, mix together mayonnaise, sweet chili sauce, and sriracha to create the sauce. Adjust sriracha based on your spice preference.
  4. Assemble the bowl starting with a layer of jasmine rice, followed by crispy chicken, shredded lettuce, cucumber, and carrots.
  5. Drizzle the spicy sauce over the bowl and sprinkle with green onions and sesame seeds. Serve immediately.
