Method
 

Step-by-Step Instructions
  1. Chop the Bacon into small pieces and cook in a heavy-bottomed pot over medium heat for 2-3 minutes.
  2. Cook the bacon for 8-10 minutes until crispy, leaving about 3 tablespoons of fat in the pot.
  3. Add chopped yellow onions and cook over medium heat for about 15 minutes until softened and brown.
  4. Reduce heat, mix in brown sugar, balsamic vinegar, and Dijon mustard, and simmer gently for 30-40 minutes.
  5. Once thickened to a jam-like consistency, season with salt and pepper, and allow to cool for 15 minutes.
  6. Transfer to an airtight container and store in the fridge for up to 4 days or freeze for longer.
