Method
 

Preparation
  1. Marinate Chicken: Combine garlic, lime juice, oil, cumin, paprika, salt, and pepper. Add chicken, coat well, cover, and marinate for at least 1 hour or overnight.
  2. Cook Chicken: Grill over medium-high heat for 5-7 minutes per side or until cooked through. Alternatively, bake in preheated oven at 450°F for ~30 minutes.
  3. Prepare Rice: Rinse jasmine rice under cold water. Soak for 10-15 minutes. Sauté onion in butter, add garlic, rice, turmeric, cumin, salt, cook for 1 minute.
  4. Cook Rice: Add chicken stock, bring to boil, then cover and simmer for 15 minutes. Stir in peas, let sit for additional 5-10 minutes, fluff with a fork.
  5. Make Green Sauce: Blend cilantro, mayonnaise, sour cream, jalapeños, garlic, olive oil, and lime juice until smooth.
  6. Serve: Plate rice, top with chicken, drizzle with green sauce, garnish with cilantro or red onion.
