Ingredients

For the Filling
  • 4 large Eggs room temperature, whisked
  • 1/4 cup Milk adds tenderness
  • 1 teaspoon Salt for flavor enhancement
  • 1 teaspoon Pepper for flavor enhancement
  • 6 links Breakfast Sausage cooked and sliced
  • 1 cup Shredded Cheddar Cheese for melting
For the Wrap
  • 4 large Flour Tortillas soft and pliable
  • 2 tablespoons Butter for cooking
  • 1 can Non-stick Cooking Spray or extra butter

Equipment

  • skillet
  • mixing bowl
  • Spatula
  • paper towel

Method

Instructions
  1. In a medium bowl, crack several room-temperature eggs and add a splash of milk, salt, and pepper. Whisk until the mixture is fully combined and slightly frothy, about 1-2 minutes.
  2. Heat a skillet over medium heat and add the breakfast sausage links. Cook for about 8-10 minutes, turning occasionally, until browned and cooked through.
  3. Using the same skillet, reduce the heat to medium-low and add a tablespoon of butter. Once melted, pour in the whisked eggs and gently stir until just set, around 3-4 minutes.
  4. Warm your flour tortillas in a dry skillet over low heat for about 30 seconds on each side.
  5. Lay a warm tortilla flat and place a generous portion of the cooked sausage, scrambled eggs, and shredded cheddar cheese in the center.
  6. Carefully roll the tortilla tightly, folding in the sides to create a secure wrap with the seam-side down.
  7. Return the roll-up to the skillet over medium heat and cook, turning occasionally, for about 4-5 minutes until golden brown and crispy.
