For the Gravy

  • 1 medium Onion Diced.
  • 2 teaspoons Fresh Thyme Chopped, can substitute with dried thyme.
  • 1 teaspoon Dried Thyme Optional.
  • 2 tablespoons Flour Can use gluten-free flour as a substitute.
  • 1 cup Chicken Broth Homemade is preferable.
  • ½ cup Asiago Cheese Grated, can substitute with parmesan.
Optional Additions
  • 4 strips Bacon Cooked, optional.
  • Vegetables Carrots, potatoes, mushrooms can be added.
  • 1 tablespoon White Miso Paste Optional for umami flavor.
  • Lemon Juice A splash to brighten the dish.
  • ½ cup Cream Optional but recommended.

Method
 

Cooking Steps
  1. Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper, brown for 3-5 minutes on each side and set aside.
  2. In the same skillet, sauté diced onion and peeled garlic until tender and fragrant, about 3-5 minutes.
  3. Add thyme and flour, cook for about 1 minute to thicken.
  4. Pour in chicken broth, deglaze the skillet, and simmer for 1 minute.
  5. Stir in asiago cheese until melted and smooth, adjust seasoning.
  6. Return chicken to skillet, cover, and cook in oven at 400°F for 15 minutes or simmer on stovetop until cooked through.
  7. For slow cooking, transfer to slow cooker after step 5 and cook on low for 4-10 hours or high for 2-4 hours.
  8. For a one-pan meal, add pasta or rice during the gravy step and increase chicken broth.
