- Preheat your oven to 375°F (190°C). Carefully butterfly each chicken breast without cutting all the way through.
- In a mixing bowl, combine feta cheese, spinach, sun-dried tomatoes, garlic, salt, black pepper, oregano, and optional red pepper flakes. Mix well.
- Lay each butterflied chicken breast flat, distribute the filling evenly in the center, and roll tightly. Secure with toothpicks or kitchen twine.
