  • 4 pieces Boneless, Skinless Chicken Breasts or thighs for richer flavor
  • 1 tsp Salt adjust to taste
  • 1 tsp Black Pepper freshly ground recommended
  • 2 tbsp Olive Oil for chicken preparation

  • 1 cup Feta Cheese crumbled, goat cheese can be used as substitute
  • 1 cup Fresh Spinach chopped, kale or Swiss chard can be alternatives
  • 1/2 cup Sun-Dried Tomatoes chopped, fresh tomatoes can be substituted
  • 2 cloves Garlic minced, can omit if using garlic powder
  • 1 tsp Dried Oregano fresh oregano works well too
  • 1 tsp Smoked Paprika regular paprika can be used as a substitute
  • 1 tsp Garlic Powder fresh garlic can also be used
  • 1/2 tsp Red Pepper Flakes optional for extra kick

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Carefully butterfly each chicken breast without cutting all the way through.
  2. In a mixing bowl, combine feta cheese, spinach, sun-dried tomatoes, garlic, salt, black pepper, oregano, and optional red pepper flakes. Mix well.
  3. Lay each butterflied chicken breast flat, distribute the filling evenly in the center, and roll tightly. Secure with toothpicks or kitchen twine.
  4. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Sear each side of the chicken rolls for about 2-3 minutes until golden brown.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before slicing to reveal the colorful filling.
