Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C) and prepare your casserole dish by lining it with heavy-duty foil.
  2. Layer the sliced shallots and half of the whole garlic cloves across the bottom of the dish, garnishing with fresh thyme and rosemary.
  3. Drizzle the chicken with oil, season with salt and pepper, and place it skin-side up over the shallots and garlic.
  4. Pour the chicken broth and white wine around the chicken, avoiding direct contact with the skin.
  5. Roast uncovered for about 1 hour, or until the skin is golden and the internal temperature reaches 165°F (74°C).
