  • 1 cup Cottage Cheese Substitute with Greek yogurt for tangy flavor
  • 1 cup Flour All-purpose flour or gluten-free
  • 2 tbsp Flour
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 2 tbsp Olive Oil
For the Flavor
  • 2 cups Baby Spinach Chopped finely
  • 1 cup Shredded Mozzarella Cheese
For the Finish
  • 1 large Egg Beaten for egg wash

Method
 

Directions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese in a mini food processor until smooth.
  3. Combine blended cottage cheese with flour, baking powder, salt, olive oil, chopped spinach, and shredded mozzarella in a large mixing bowl.
  4. Transfer the dough onto a lightly floured surface, shape it into a thick log, and cut into 6 equal pieces.
  5. Shape each piece into a flatter circle with a hole in the center to mimic a bagel shape.
  6. Place each flagel on the prepared baking sheet and brush with the beaten egg wash.
  7. Bake in the preheated oven for 22-25 minutes until golden brown.
  8. Cool the flagels on a wire rack for a few minutes before serving.
