  • 1 cup All-Purpose Flour Can use whole-wheat flour as a substitute.
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/2 tsp Ground Cumin Optional.
  • 2 tbsp Sugar
  • 1 large Eggs
  • 1 cup Milk Any milk substitute can be used.
  • 2 tbsp Melted Butter Coconut oil can be used for a tropical twist.
  • 1/4 cup Fresh Cilantro Optional; can replace with parsley or omit.
For the Pineapple Filling
  • 1 cup Pineapple Chunks Use fresh, canned, or frozen (thawed).

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with cooking spray or parchment paper.
  2. In a large mixing bowl, whisk together all-purpose flour, baking powder, salt, black pepper, ground cumin, and sugar.
  3. In a separate bowl, beat the egg lightly, then mix in the milk and melted butter. Add chopped cilantro if using.
  4. Combine the wet mixture into the dry ingredients gently, ensuring not to overmix.
  5. Fold in the pineapple chunks until evenly distributed in the batter.
  6. Drop dollops of the batter onto the prepared baking sheet, leaving space between each fritter.
  7. Bake for 15-20 minutes or until golden brown. Check for doneness by lightly pressing the tops.
  8. Cool on the baking sheet for a few minutes before serving.
