For the Filling
  • 0.5 cup Softened Butter at room temperature
  • 2 cups Powdered Sugar sift before using
  • 1 teaspoon Vanilla Extract or almond flavoring
  • as needed Milk for desired consistency

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat softened butter and granulated sugar together until light and fluffy.
  3. Add egg and vanilla extract, beating until fully combined.
  4. Whisk together flour, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet ingredients.
  6. Stir in milk until the dough is soft but not sticky.
  7. Divide dough and tint with gel food coloring to desired shades.
  8. Roll tablespoon-sized balls of dough and place them on the baking sheet.
  9. Flatten the balls slightly and bake for 8-10 minutes.
  10. Cool cookies on wire rack.
  11. Beat filling ingredients until smooth and fluffy.
  12. Spread filling on one cookie and sandwich with another, then let set for 10 minutes.
