- Dice chicken into bite-sized cubes, season with salt and pepper.
- Heat olive oil in a skillet and sear chicken until golden brown. Remove and set aside.
- Sauté chopped onion in the same skillet until softened. Add minced garlic and cook until fragrant.
- Add rice to the skillet, stirring to coat it in the oils and toast for 1-2 minutes.
- Pour in chicken broth and bring to a simmer, scraping browned bits from the skillet.
- Return chicken to the skillet, add BBQ sauce, cover, and simmer for 18-20 minutes until rice is cooked.
- Fluff rice with a fork and optionally broil for a couple of minutes. Serve hot.
