  • 1 cup BBQ Sauce Choose your favorite style (honey, spicy, or tangy).
For Cooking
  • 2 tablespoons Olive Oil For searing the chicken.
  • 1 medium Onion Chopped, can substitute with shallots.
  • 2 cloves Garlic Minced, can use garlic powder.
  • 1 cup Chicken Broth Can substitute with water.

Method
 

Step-by-Step Instructions
  1. Dice chicken into bite-sized cubes, season with salt and pepper.
  2. Heat olive oil in a skillet and sear chicken until golden brown. Remove and set aside.
  3. Sauté chopped onion in the same skillet until softened. Add minced garlic and cook until fragrant.
  4. Add rice to the skillet, stirring to coat it in the oils and toast for 1-2 minutes.
  5. Pour in chicken broth and bring to a simmer, scraping browned bits from the skillet.
  6. Return chicken to the skillet, add BBQ sauce, cover, and simmer for 18-20 minutes until rice is cooked.
  7. Fluff rice with a fork and optionally broil for a couple of minutes. Serve hot.
