- Preheat your oven to 350°F (175°C).
- Cut the bacon into halves and cook in a skillet over medium heat for about 5 minutes on each side.
- Grease a 9x13-inch baking dish with nonstick spray or melted butter.
- Hollow out the top of each brioche roll using a sharp knife.
- Butter the inside of each hollowed-out roll with melted butter.
- Sprinkle about 1 tablespoon of shredded cheddar cheese into each roll.
- Press a slice of partially cooked bacon into each roll on top of the cheese.
- Crack an egg into each roll, allowing the whites to overflow slightly.
- Season the eggs with salt, pepper, garlic powder, and onion powder.
- Bake in the preheated oven for approximately 30 minutes, checking for doneness.
- Remove from the oven, let cool slightly, and garnish with chopped green onions before serving.
