  • 1 teaspoon Baking Soda
  • 0.5 cup Unsalted Butter melted, or use vegan butter
  • 0.5 cup Greek Yogurt or any dairy-free yogurt
  • 0.5 cup Dutch Process Cocoa Powder or natural cocoa powder
  • 0.75 cup Granulated Sugar or caster sugar
  • 0.5 cup Brown Sugar
  • 1 large Egg room temperature
  • 1 teaspoon Vanilla Extract
  • 0.5 teaspoon Kosher Salt
  • 1 cup Chocolate Chips dark, milk, or semisweet

  • 0.5 cup Extra Chocolate Chips for topping

Method
 

Instructions
  1. Preheat your oven to 350°F (180°C) and line a loaf pan with parchment paper.
  2. In a mixing bowl, whisk together pumpkin puree, Greek yogurt, and melted butter until smooth. Add kosher salt, egg, granulated sugar, brown sugar, and vanilla extract; blend for 2–3 minutes.
  3. Sift flour and baking soda into the wet mixture, stirring until just combined.
  4. Gradually add Dutch process cocoa powder, folding it in until fully incorporated.
  5. Gently fold in chocolate chips until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan, smoothing the top. Optionally, sprinkle extra chocolate chips on top.
  7. Bake in the preheated oven for 50–60 minutes, checking for doneness with a toothpick.
  8. Remove from oven and let cool for 20 minutes in the pan, then transfer to a wire rack to cool completely.
