Ingredients
  

  • 1 lb Ground Beef Substitution: Use ground turkey or chicken for a leaner option.
  • 2 tbsp Olive Oil Extra virgin olive oil is preferred for its flavor.
  • 1 Onion Dice finely for even cooking.
  • 2 Garlic cloves Mince for maximum impact.
  • 1 Zucchini Chop into even pieces for uniform cooking.
  • 1 Red Bell Pepper Chop into bite-sized pieces.
  • 1 cup Cherry Tomatoes Halve for even distribution in the stir fry.
  • ½ cup Kalamata Olives Slice for easy mixing.
  • 1 tsp Dried Oregano
  • 1 tsp Cumin
  • 1 tsp Paprika
  • Salt to taste
  • Black Pepper to taste
  • ½ cup Feta Cheese Substitution: Use dairy-free feta or nutritional yeast for dairy-free diets.
  • ¼ cup Fresh Parsley Chop for garnish.
  • 1 Lemon Juice Freshly squeezed is recommended for best taste.

Method
 

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 1-2 minutes until shimmering.
  2. Add 1 finely diced onion and 2 minced garlic cloves, sauté for 3-4 minutes until the onion is translucent and fragrant.
  3. Incorporate 1 pound of ground beef, breaking it apart as it cooks for about 5-7 minutes until browned.
  4. Stir in 1 chopped zucchini, 1 chopped red bell pepper, and 1 cup of halved cherry tomatoes; cook for 5-7 minutes until tender.
  5. Mix in ½ cup of sliced Kalamata olives, 1 teaspoon of dried oregano, 1 teaspoon of cumin, 1 teaspoon of paprika, and a pinch of salt and pepper; cook for another 2-3 minutes.
  6. Fold in ½ cup of crumbled feta cheese and ¼ cup of chopped fresh parsley; stir gently to combine.
  7. Squeeze the juice of 1 fresh lemon over the stir fry before serving and toss all ingredients together.
