- Heat 2 tablespoons of olive oil in a large skillet over medium heat for about 1-2 minutes until shimmering.
- Add 1 finely diced onion and 2 minced garlic cloves, sauté for 3-4 minutes until the onion is translucent and fragrant.
- Incorporate 1 pound of ground beef, breaking it apart as it cooks for about 5-7 minutes until browned.
- Stir in 1 chopped zucchini, 1 chopped red bell pepper, and 1 cup of halved cherry tomatoes; cook for 5-7 minutes until tender.
- Mix in ½ cup of sliced Kalamata olives, 1 teaspoon of dried oregano, 1 teaspoon of cumin, 1 teaspoon of paprika, and a pinch of salt and pepper; cook for another 2-3 minutes.
- Fold in ½ cup of crumbled feta cheese and ¼ cup of chopped fresh parsley; stir gently to combine.
- Squeeze the juice of 1 fresh lemon over the stir fry before serving and toss all ingredients together.
