  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together 2 1/2 cups of all-purpose flour, 3/4 teaspoon of baking soda, and 1/2 teaspoon of salt.
  3. In a food processor, combine 1 3/4 cups of white sugar and 2/3 cup of fresh basil leaves. Pulse until finely ground.
  4. In a stand mixer, add 2 sticks of room-temperature butter and the basil sugar mixture. Beat until light and fluffy.
  5. With the mixer on low, gradually incorporate 1 tablespoon of vanilla bean paste, 2 teaspoons of lemon zest, 1 whole egg, and 1 egg yolk.
  6. Slowly add the dry ingredients into the wet mixture, mixing on low until just combined.
  7. Using a cookie scoop or spoon, portion out the cookie dough onto a parchment-lined baking tray.
  8. Roll each cookie dough ball in 1/4 cup of basil sugar.
  9. Bake for 8-9 minutes, until the edges are set but the centers look slightly underbaked.
  10. Cool on the baking tray for 5-10 minutes before transferring to a wire rack.
