- Preheat your oven to 350°F (175°C), and grease a mini donut pan lightly with oil.
- Whisk together your choice of milk, white or cider vinegar, oil (or chosen substitute), and pure vanilla extract until well combined.
- In a larger bowl, sift together flour, baking powder, sugar (or Xylitol), and salt; stir until well blended.
- Gradually pour the wet ingredients into the bowl of dry ingredients, gently fold until just combined.
- Pour the batter into the greased mini donut pan, filling each mold about three-quarters full. Bake for approximately 8 minutes.
- Allow the donuts to cool for a few minutes on a wire rack, then carefully release them.
- Once cool, roll each donut in powdered sugar or sprinkle it over the tops for an even coating.
