Preparation Steps
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine all the dry ingredients: oats, oat flour, walnuts, chia seeds, baking soda, and salt.
- In a separate bowl, whisk together the wet ingredients until smooth and creamy.
- Gradually pour the wet ingredients into the dry mixture and stir until no dry flour remains.
- Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet and flatten slightly.
- Bake for 9-11 minutes until tops are set and lightly golden around the edges.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
