  • 2 tablespoons Capers in brine
  • 1 unit Lemon juice and zest

Method
 

Step-by-Step Instructions
  1. Cook pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve ½ cup of pasta cooking water.
  2. In a skillet, heat olive oil over medium heat, add minced garlic and red pepper flakes, sauté for 2 minutes.
  3. Add lemon zest and juice, capers, and reserved pasta water, simmer for 2-3 minutes to thicken.
  4. Drain pasta and combine with the sauce in the skillet, toss to coat. Add fresh herbs if desired.
  5. Serve with grated Parmesan and a drizzle of olive oil on top.
