Step-by-Step Instructions
- Begin by melting 2–3 tablespoons of butter in a large skillet over medium heat.
- Add 1 pound of corned beef, breaking it into bite-sized pieces. Sauté for about 5 minutes.
- Stir in 4 cups of coleslaw mix into the skillet with the corned beef. Cover and cook for another 5 minutes.
- Remove the lid and gently stir the mixture to combine the corned beef and coleslaw evenly.
- Evenly sprinkle 1 cup of Swiss cheese on top. Cover again and reduce heat to low.
- Broil for about 1-2 minutes until the cheese is melted and slightly golden.
- In a small bowl, mix together 1 cup of mayonnaise, 1/4 cup of sugar-free ketchup, 4 teaspoons of horseradish, and 1 teaspoon of Worcestershire sauce.
- Drizzle each serving with the homemade Russian dressing and top with sliced scallions.

Notes
Ensure the skillet is hot when sautéing; avoid overcooking the coleslaw mix to retain some crunch.
