Shrimp
  • 1 pound Fresh Shrimp Thawed frozen shrimp can be used.
Pesto
  • 1 cup Basil Pesto Homemade or store-bought.
  • 1/4 cup Toasted Pine Nuts Can substitute with walnuts.
  • 1/4 cup Grated Parmesan Cheese Optional for a lighter dish.
Grilling
  • 2 tablespoons Olive Oil For coating shrimp and grill.

Method
 

Preparation
  1. Clean and devein the shrimp if necessary. Rinse under cold water and pat dry.
  2. Place shrimp in a mixing bowl and add basil pesto, coating generously. Optionally toss in pine nuts and Parmesan.
  3. Let the shrimp marinate for 15 minutes.
Grilling
  1. Preheat the grill to medium-high heat around 400°F (200°C). Clean and oil the grates.
  2. Place marinated shrimp on the grill in a single layer. Grill for 2-3 minutes on each side until pink and opaque.
  3. Remove from grill and serve immediately.
