For the Sandwich
  • 4 slices Bologna Thick slices preferred
  • 2 slices Bread Traditional white or rolls
  • 1 tablespoon Mayonnaise Optional mustard for zest
  • 1 medium Tomato Thick slices preferred
  • 2 slices Cheddar Cheese American cheese as an alternative
  • 1 spray Cooking Spray Can substitute with butter or oil
Optional Toppings
  • 2 large Fried Eggs For richness
  • 1 small Onions Sautéed for sweetness
  • 2 tablespoons Jalapeños Sliced for a spicy kick

Method
 

Directions
  1. Spread 1 tablespoon of mayonnaise on one side of each slice of bread. Layer thick tomato slices and cheddar cheese on the unbuttered side.
  2. Heat a skillet over medium-high heat, applying cooking spray. Cut an 'X' in each bologna slice, then fry each for 3-4 minutes on both sides until crispy.
  3. Layer three slices of fried bologna on the mayonnaise side of the bread, top with tomato and cheese. Cover completely with the other slice.
  4. Press the sandwich and return it to the skillet. Toast for 3-4 minutes per side until golden brown.
  5. Remove from skillet, let cool slightly, cut in half if desired, and serve immediately.
