Directions
- Spread 1 tablespoon of mayonnaise on one side of each slice of bread. Layer thick tomato slices and cheddar cheese on the unbuttered side.
- Heat a skillet over medium-high heat, applying cooking spray. Cut an 'X' in each bologna slice, then fry each for 3-4 minutes on both sides until crispy.
- Layer three slices of fried bologna on the mayonnaise side of the bread, top with tomato and cheese. Cover completely with the other slice.
- Press the sandwich and return it to the skillet. Toast for 3-4 minutes per side until golden brown.
- Remove from skillet, let cool slightly, cut in half if desired, and serve immediately.
