For the Filling
  • 8 oz Cream Cheese (softened) Must be at room temperature.
  • 3/4 cup Powdered Sugar Can swap with a sugar alternative.
  • 1 cup Whipped Cream Homemade or store-bought.
  • 1 tsp Vanilla Extract Use pure vanilla for best flavor.
For the Topping
  • 1 cup Fresh Strawberries (sliced) Thawed frozen strawberries can be used.
  • 1/4 cup Strawberry Jam Other fruit jams can be substituted.

Method
 

Steps
  1. In a mixing bowl, combine crushed graham crackers with melted butter until the mixture resembles wet sand.
  2. Firmly press the graham cracker mixture into the bottom of a greased 8-inch or 9-inch springform pan.
  3. In a large mixing bowl, beat softened cream cheese using an electric mixer until smooth and creamy.
  4. Gently fold in the whipped cream into the cream cheese mixture with a spatula.
  5. Carefully spread the cream cheese filling over the chilled graham cracker crust in the springform pan.
  6. Mix together the sliced fresh strawberries and strawberry jam until well coated and spoon this mixture over the cheesecake layer.
  7. Cover the springform pan with plastic wrap and refrigerate for at least 4 hours.
  8. Once chilled, carefully release the cheesecake from the springform pan and slice into wedges.
