Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F) and mix flour, butter, and sugar until it resembles breadcrumbs. Add egg, forming a dough. Press into greased tin and blind bake for 10-15 minutes.
  2. Once baked, spread raspberry jam evenly over the warm pastry base.
  3. Reduce oven temperature to 180°C (350°F). Cream butter and sugar until fluffy, then add egg, followed by cherries, currants, and ground almonds. Adjust consistency with milk if needed.
  4. Spread this mixture over the jam layer and bake for 25-30 minutes until golden brown.
  5. Allow to cool slightly in the tin, then sprinkle with caster sugar before cooling completely and slicing.
