  • 1 cup pepper jack cheese divided

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, diced green chiles, and half of the pepper jack cheese. Stir until well mixed.
  3. Lay out your tortillas on a clean surface. Take a generous spoonful of the chicken mixture and place it in the center of each tortilla. Roll them tightly and arrange them seam-side down in a greased baking dish.
  4. Pour an even layer of green enchilada sauce over the top of the assembled enchiladas.
  5. Sprinkle the remaining pepper jack cheese generously over the sauced enchiladas.
  6. Place the dish in the preheated oven and bake for 25-30 minutes.
  7. Once baked, remove the enchiladas from the oven, allow them to cool for a few minutes, and garnish with fresh cilantro.
