Preparation Steps
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, diced green chiles, and half of the pepper jack cheese. Stir until well mixed.
- Lay out your tortillas on a clean surface. Take a generous spoonful of the chicken mixture and place it in the center of each tortilla. Roll them tightly and arrange them seam-side down in a greased baking dish.
- Pour an even layer of green enchilada sauce over the top of the assembled enchiladas.
- Sprinkle the remaining pepper jack cheese generously over the sauced enchiladas.
- Place the dish in the preheated oven and bake for 25-30 minutes.
- Once baked, remove the enchiladas from the oven, allow them to cool for a few minutes, and garnish with fresh cilantro.
