Preparation
- Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
- In a large mixing bowl, combine rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together almond milk, maple syrup, chia egg, melted vegan butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until combined.
- Transfer the mixture to the greased baking dish.
- Melt vegan butter and stir in maple syrup in a saucepan; add chopped pecans and mix well.
- Distribute the pecan topping over the oatmeal and bake for 35 to 40 minutes.
- Remove from the oven and let cool for 5 minutes before serving.
