  • 1 teaspoon Cinnamon
  • 1 pinch Salt
Wet Ingredients
  • 2 cups Unsweetened Almond Milk or any plant-based milk
  • 1/2 cup Maple Syrup sugar-free alternatives are acceptable
  • 1 tablespoon Chia Egg (1 Tbsp Chia Seeds + 3 Tbsp Water) for binding
  • 1/4 cup Melted Vegan Butter or coconut oil
  • 1 teaspoon Vanilla Extract
Topping
  • 1 cup Pecans chopped for topping
  • 2 tablespoons Maple Syrup optional for drizzling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
  2. In a large mixing bowl, combine rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together almond milk, maple syrup, chia egg, melted vegan butter, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until combined.
  5. Transfer the mixture to the greased baking dish.
  6. Melt vegan butter and stir in maple syrup in a saucepan; add chopped pecans and mix well.
  7. Distribute the pecan topping over the oatmeal and bake for 35 to 40 minutes.
  8. Remove from the oven and let cool for 5 minutes before serving.
