Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a medium mixing bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt until well combined.
  3. In a large mixing bowl, beat the softened unsalted butter and brown sugar together on medium speed for 2-3 minutes.
  4. Add the room-temperature eggs, one at a time, mixing well after each addition. Then, pour in the vanilla extract.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Gently fold in old-fashioned oats and raisins.
  6. Pour the cookie mixture into your prepared baking pan and spread it evenly. Bake for 18-20 minutes until golden brown.
  7. Once baked, allow to cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.
  8. For the frosting, beat the softened butter until smooth, then gradually add powdered sugar, maple syrup, heavy cream, and a pinch of cinnamon.
  9. Once the cookie bars are cooled, spread the creamy frosting evenly over the top, slice into squares, and serve.
