  • 2 tablespoons granulated sugar or sugar alternative for lower calories
  • 1/2 teaspoon vanilla extract can substitute with almond extract

  • 16 oz 2% cottage cheese full-fat cottage cheese can be used for a richer flavor
  • 2 large egg yolks fresh for the best results
  • 1/4 cup sugar adjust to taste

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine coffee, sugar, and vanilla extract. Stir until sugar dissolves and let cool.
  2. Blend cottage cheese until smooth. Add sugar and vanilla, blending until creamy. Refrigerate to chill.
  3. In a double boiler, whisk egg yolks and sugar until pale and doubled in volume, about 10 minutes.
  4. Fold egg yolk mixture into the chilled cottage cheese until smooth.
  5. Dip ladyfingers in the coffee mixture and layer in a serving dish. Spread half of the cottage cheese mixture on top.
  6. Layer dipped ladyfingers again and top with the remaining cottage cheese mixture.
  7. Cover with plastic wrap and refrigerate for at least 4 hours before serving.
