- In a medium bowl, combine coffee, sugar, and vanilla extract. Stir until sugar dissolves and let cool.

- In a double boiler, whisk egg yolks and sugar until pale and doubled in volume, about 10 minutes.
- Fold egg yolk mixture into the chilled cottage cheese until smooth.
- Dip ladyfingers in the coffee mixture and layer in a serving dish. Spread half of the cottage cheese mixture on top.
