- In a medium bowl, combine olive oil, garlic powder, paprika, cayenne pepper, salt, and pepper. Toss the large shrimp in this aromatic mixture and let them marinate for 10 minutes.
- Peel and dice the ripe mango into chunks. In a blender, combine the diced mango, lime juice, jalapeño, and honey if desired. Blend until smooth, checking seasoning and adding a pinch of salt if needed.
- Preheat your grill to medium-high heat (350°F to 400°F), and lightly oil the grill grates.
- Thread the marinated shrimp onto skewers, allowing space between each shrimp for even cooking.
- On the grill, place the skewers and cook for 2-3 minutes on each side until shrimp are opaque and firm.
- Transfer the grilled shrimp to a serving platter and drizzle with the mango lime coulis or serve it in a bowl on the side.
