  • 2 tablespoons olive oil for marinating
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper adjust for heat
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Mango Lime Coulis
  • 1 large ripe mango or substitute with pineapple
  • 1 tablespoon lime juice freshly squeezed
  • 1 small jalapeño pepper adjust for heat
  • 1 tablespoon honey optional

Method
 

Preparation Steps
  1. In a medium bowl, combine olive oil, garlic powder, paprika, cayenne pepper, salt, and pepper. Toss the large shrimp in this aromatic mixture and let them marinate for 10 minutes.
  2. Peel and dice the ripe mango into chunks. In a blender, combine the diced mango, lime juice, jalapeño, and honey if desired. Blend until smooth, checking seasoning and adding a pinch of salt if needed.
  3. Preheat your grill to medium-high heat (350°F to 400°F), and lightly oil the grill grates.
  4. Thread the marinated shrimp onto skewers, allowing space between each shrimp for even cooking.
  5. On the grill, place the skewers and cook for 2-3 minutes on each side until shrimp are opaque and firm.
  6. Transfer the grilled shrimp to a serving platter and drizzle with the mango lime coulis or serve it in a bowl on the side.
