Step-by-Step Instructions
  1. In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, and Greek yogurt. Add the chicken breasts and marinate for at least 30 minutes.
  2. Prepare your chosen base. Cook rice or quinoa as per package instructions for 15-20 minutes or sauté cauliflower rice for 5-7 minutes.
  3. Preheat grill over medium-high heat. Grill marinated chicken for 6-7 minutes on each side until fully cooked (internal temp 165°F). Let it rest before slicing.
  4. Chop the cucumber, tomatoes, and red onion while the chicken rests. Arrange for assembly.
  5. Layer the cooked base in bowls, top with sliced grilled chicken, and add chopped veggies. Drizzle with tzatziki sauce.
  6. Finish with fresh herbs and optional toppings. Serve immediately to enjoy the meal.
