Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400ºF (200ºC).
  2. In a food processor, pulse together fresh bread, minced garlic, lemon zest, salt, thyme, and pepper until finely crumbed. Set aside.
  3. In a mixing bowl, whisk together the buttermilk and Dijon mustard until smooth. Pour over chicken and let soak for at least 15 minutes.
  4. Remove chicken from marinade and coat with bread crumbs. Place on parchment-lined baking sheet.
  5. Roast in the oven for approximately 40 minutes until internal temperature reaches 165ºF (75ºC) and bread crumbs are golden brown.
  6. Let the chicken rest for 5 to 10 minutes before serving.
