- Preheat the oven to 375°F (190°C).
- Trim the ends of the Brussels sprouts and slice them in half. In a cast-iron skillet, melt butter over medium heat and sauté minced garlic for 1-2 minutes until fragrant. Add halved Brussels sprouts and cook for 8-10 minutes until tender and caramelized.
- Pour in heavy cream and sprinkle in freshly grated nutmeg. Stir to combine and warm through for about 3-4 minutes.
- Reduce heat to low and mix in cheddar, parmesan, and fontina cheese until melted and smooth, about 3-5 minutes.
- Transfer the mixture to a baking dish and top with extra cheese if desired. Bake for about 20 minutes until bubbling and golden brown.
- Remove from oven and let cool slightly. Garnish with freshly chopped parsley if using, and serve.
